After competing in (and winning) several SCA (Steak Cookoff Association) events around the United States we started developing these rubs to take our competition cooking to the next level. Much longer than that, it is possible that the marinade can start to break down the fibres of the meat, causing it to become soft. Always marinate meat and poultry in the refrigerator. Boil the used marinade to brush it on the meat or poultry while grilling.
